Chicken Special

Here is something a little different to spice up your BBQ.

2 Chicken Breasts

2 medium sized potatoes

4 or 5 button mushrooms

1 onion

1 pepper red or green or yellow

Sauce of choice

Foil tray around 2 to 3 inches deep and depending on how many you are cooking for the tray should be 6 inches by 4 inches.  Sizes for 2 to 4 people.

If you have room on BBQ you could bake potatoes in their jackets (if doing baked pots remember they will take longer than the chicken and mushroom etc. so put them on 10 to 15 minutes before anything else)  If you don’t have enough room then place them in the microwave for 5 minutes  We leave the potato skins on as they taste lovely and crisp when BBQ’d

Make your own sauce using chopped tomatoes, herbs de Provence, garlic adding in whatever you fancy to make a nice tasty sauce.  We sometimes use 1/2 jar of either lemon and garlic sauce, Ginger and onion sauce available from any supermarket – even been known to use honey mustard.

Method:   Cut the chicken breasts into strips lengthways.  Cook on BBQ turning frequently until cooked. Cooking chicken strips cuts down on cooking time and also cuts out the uncertainty of the chicken being fully cooked.  (also makes it go further if someone unexpected turns up)  At the same time slice mushrooms, onion and pepper and place in foil tray with a splash of olive oil.  Cook mushrooms and pepper in tray until pepper and onion are soft and mushrooms just starting to brown.  Now add sauce and bring to temperature.  Add cooked chicken strips and stir in to cover all items in sauce.

Place jackets on plate with chicken strips and pour sauce etc. over potato and enjoy
